Apple and Berry Crumble with toasted muesli

Firstly make the toasted muesli
- 2 cups of oats
- 1/2 cup coconut
- Hand full of slithered almonds
- 1-2 tbsp. of coconut oil
• Mix all together and the bake in oven at 180° till nice and toasted (approx 20mins).
- 2 apples
- 1/2 cup Berries
- 1 tsp. nativa
- toasted muesli

Slice 2 apples thinly and boil for about 5mins till soft. Drain water and pat with paper towel to remove excess water. Divide apples into 2 small baking dishes and then top with berries that have been mixed with a sprinkle of Natvia (to get rid of the tart taste and make them a little bit sweet) then top with toasted muesli and put in oven for 20mins just top with yogurt and cinnamon!!!! Perfect for these cold mornings xx

Banana Stuffed French toast

- 2 slices rye bread
- 1 teaspoon almond butter
- 2 tablespoons cottage cheese
- 1 banana, sliced or smashed
- Pinch cinnamon
- 1 egg
- 40 ml almond milk
- 1/4 teaspoon vanilla bean paste

Method:
1. Spread one side of the sourdough with almond butter and the other side with cottage cheese.
2. Top the almond butter side with sliced banana, a sprinkle of cinnamon and a small drizzle of honey.
3. Sandwich together firmly.
4. Beat egg, milk + vanilla.
5. Dip sandwich in the egg wash and allow the bread to soak it up.
6. Cook over a low – medium heat on both sides until Golden, crisp and heated through.

Brownie Pancake Stack

• 1 banana, peeled
• 2 egg whites
• 1 whole egg
• 2 tablespoons almond flour
• 2 tablespoons unsweetened cocoa powder
• 1 teaspoon vanilla extract
• 1/2 teaspoon baking soda
• 1/2 teaspoon cinnamon
• pinch of salt
TOPPING
• handful of strawberries, diced
• 1/4 cup coconut butter
• 1 tablespoon unsweetened cocoa powder

1. In a food processor or blender add your banana and pulse until completely broken down into a soupy paste.
2. Then add your egg whites and egg and pulse again to combine.
3. Lastly, add all of the rest of your pancake ingredients and pulse to thoroughly combine.
4. Heat up a large skillet under medium heat, grease with a bit of coconut oil, and add your pancake batter to the hot skillet with a spoon. Make to your preference size, small for the skewers, large for big boy ones.
5. Flip pancakes when you begin to see bubbles forming on the top surface of the pancakes. The smaller they are, the shorter amount of time they will take to cook so keep on eye on them.
6. While your pancakes cook, mix your coconut butter, cocoa powder. Place in microwave if needed to mix thoroughly into a paste.
7. Once your pancakes are done cooking, stack one pancake, then a slice of strawberry and repeat as many times as needed, stick a toothpick through it, and pour chocolate sauce over your pancakes.

Muesli Bars

Put oats into a bowl, mix in some chopped raspberries or mixed berries, chopped apple with a little boiled water to combine, Once all mixed through add some chopped almonds (do it after adding boiling water so they stay crunchy. Can also add some cinnamon for taste.
Place mix into a dish and smooth it out so its like a rectangle or square and as thick as you want. Mix Choc Protowhey and some boiling water in a bowl til a smooth paste and place on top of mix (you could use yogurt instead). Refrigerate or freeze until set and then cut up into snack size pieces. (Could also make balls instead)

Toasted Oat Muesli - for a quick breaky option!! Smile

2 big cups of rolled oats
1/2-1 cup of dessicated coconut
Big hand ful of almonds - chopped up
1 tbsp cinnamon

Method
Mix all ingredients in a big bowl
Pre-heat oven to 180 fan forced, and cook oats on baking paper lined slice tray!
Cook till brown and crunchy Smile cooks fast, 20 mins is enough, mix half way through
Place in a container in fridge and add to yoghurt as needed.
NOTE: This is a rough estimation of the amounts i used. If you feel anything needs more or less just see that the amount is like in your bowl Smile

Grilled Tomatoes with Cottage Cheese & Herbs

Ingredients
• Tomato (cut in half)
• 1 tsp Cottage Cheese
• Mixed herbs (I used Italian)
Method
Cut Tomato in half, top with 1 tsp cottage cheese & sprinkle of herbs and grill for about 5 minutes on high.

Egg white omelette

• 1 whole egg
• 3-4 egg whites (depending on how hungry you are).
• 30grams of chopped ham,
• Capsicum
• Onion
• Mushroom

Add a teaspoon of cottage cheese for thicker consistency and a slightly different taste. Both ways are super yummy

Egg Fritata/Omelette

• 2 eggs + 2 whites
• Dollop of cottage cheese, mix up- add pepper
• Add some spring onions (shallots)
• torn baby spinach
• +cut up smoked salmon.

Method:
• Cook in non stick pan, will cover whole pan- i flip in 2 parts then press down again, and cook other side. bout 5 mins each side.
Makes 2 serves. I also add 1/4 avo to serve with.

Crepes

• 4 eggs white/ half a cup of frozen egg whites
• 1 scoop of protein powder (vanilla is the yummiest)
• a pinch of cinnamon

Method:
• Blend all together till no lumps
• Cook in non stick pan on a medium heat as they burn easily if too high.
• About 1 minute each side and your done.
Makes 2 medium sized ones.
I top with almond butter and blueberries its amazing and so fast!

Chocolate Crepes

• 4 egg whites/ Half cup of frozen egg whites.
• 1 scoop chocolate protein powder
• dash vanilla essence (Add more or less depending on your taste)
Method:
• Mix all together till there are no lumps
• Cook in non stick pan on a medium heat as they burn easily if too high.
• About 1 minute each side and your done.
Top with yogurt and berries.
If you want a thicker crepe (pancake) just add almond meal, about 1 Tablespoon for this size recipe, also 1/2 teaspoon of baking powder will make them rise like pancakes as well Smile

Sweet Pancakes

• 6 egg whites
• 1 cup of rolled oats (can substitute with almond meal instead)
• 2 scoops of vanilla protein powder
• 1 tsp baking powder
• 1/2 cup of low fat cottage cheese (or more if you like)
• 1 tsp vanilla essence
• 1/2 tsp cinnamon
Method:
• Combine egg whites, protein powder and cottage cheese in a blender.
• Blend until smooth and combined.
• Add remaining ingredients and blend again until creamy.
• Cook in a non-stick pan over medium heat for 2-3mins per side until golden brown.
• Serve with fresh berries and a dollop of Greek Yogurt

Strawberries and 'cream' (Serves 2)

Ingredients: 1 scoop of vanilla whey protein 1/2 a cup (60g) of low fat cottage cheese 1 punnet of strawberries, washed and hulled

Method: Combine the whey protein and cottage cheese in a food processor. Add some water about 1tbsp at a time to achieve a cream-like consistency. (You can omit the water entirely if you'd like more of a whipped cream effect). Refrigerate for 20 minutes before serving on top of the strawberries.

Nutritional info: Calories: 137 Protein: 23.8g Fat: 1.4g Carbs: 5.5g (3.8g net) Sugars: 3.4g Fibre: 1.7g
